Autumn and winter 2018 has been a great season for Flammulina velutipes. Some massive bunches popping up from Poplar and Pomaderris stumps around Selby. The velvety stipe, that darkens as it nears the attachment to the substrate, which when cut is hollow like a tube, the white spore print and the strong citrusy smell are all characteristics of this species.
This is of course the wild version of the white skinny Enoki mushrooms from your local supermarket or Asian grocer.
One of our favourites and for some reason the wild flavours are the best.
